Ingredients
- 4 cup Fresh spinach leaves
- 1 cup Fresh carrots grated
- 1 cup Fresh mushrooms sliced
- 2 cup Corn (canned low-sodium)
- Vinaigrette
- 1 bulb Garlic separated and peeled
- 1/2 cup Water
- 1 tbsp Red wine vinegar
- 1/4 tsp Honey
- 1 tbsp Virgin olive oil
- 1/4 tsp Black pepper

Instructions
- Place garlic cloves in a saucepan and pour water to cover the cloves.
- Bring water to a boil, reduce heat, and simmer until garlic is tender, about 15 minutes.
- Reduce the liquid to 2 tbsp and increase heat for 3 minutes.
- Pour contents into a small sieve over a bowl and mash the garlic through the sieve.
- Whisk the vinegar into the garlic mixture. Add oil and black pepper.
- Serve over salad
