Spinach Salad
Ingredients
  • 4cup Fresh spinach leaves
  • 1cup Fresh carrotsgrated
  • 1cup Fresh mushroomssliced
  • 2cup Corn(canned low-sodium)
  • Vinaigrette
  • 1bulb Garlicseparated and peeled
  • 1/2cup Water
  • 1tbsp Red wine vinegar
  • 1/4tsp Honey
  • 1tbsp Virgin olive oil
  • 1/4tsp Black pepper
Instructions
  1. Place garlic cloves in a saucepan and pour water to cover the cloves.
  2. Bring water to a boil, reduce heat, and simmer until garlic is tender, about 15 minutes.
  3. Reduce the liquid to 2 tbsp and increase heat for 3 minutes.
  4. Pour contents into a small sieve over a bowl and mash the garlic through the sieve.
  5. Whisk the vinegar into the garlic mixture. Add oil and black pepper.
  6. Serve over salad

Serve with Vegetarian Spaghetti for a healthy plate.
