Ingredients
- 2 Tomatoes
- 2 Chinese eggplants medium size
- 1 stalk Green onion
- 3 cloves Garlic
- 1 Canola oil
- 1/8 tsp Sichuan pepper powder
- 1 tbsp Low sodium soy sauce
- 1 tsp Vinegar
- 1-1/2 cups Water

Instructions
- 1. Wash the tomatoes and eggplants. Cut the tomoatoes, eggplants, onion and garlic into pieces.
- 2. Heat the oil and pepper powder in a pan, then add the onion and garlic and stir-fry until fragrant. Pour the soy sauce and vinegar into the pan.
- 3. Pour the tomato and eggplant together and stir fry for 1 minute.
- 4. Add the water and cook over medium heat for 15 minutes.
