Braised Eggplant with Tomato
Ingredients
  • 2 Tomatoes
  • 2 Chinese eggplantsmedium size
  • 1stalk Green onion
  • 3cloves Garlic
  • 1 Canola oil
  • 1/8tsp Sichuan pepper powder
  • 1tbsp Low sodium soy sauce
  • 1tsp Vinegar
  • 1-1/2cups Water
Instructions
  1. 1. Wash the tomatoes and eggplants. Cut the tomoatoes, eggplants, onion and garlic into pieces.
  2. 2. Heat the oil and pepper powder in a pan, then add the onion and garlic and stir-fry until fragrant. Pour the soy sauce and vinegar into the pan.
  3. 3. Pour the tomato and eggplant together and stir fry for 1 minute.
  4. 4. Add the water and cook over medium heat for 15 minutes.
