Black Bean Patties

Ingredients
  • 1 tbsp Olive oil
  • 4 tbsp Chopped fresh basil 60 mL
  • 1/2 cup Green pepper, chopped
  • 1/2 cup Chicken breast meat, cooked and chopped
  • 2 clove Garlic, minced
  • 1 tsp Chili powder
  • 1/2 tsp Dried oregano
  • 1/2 tsp Cumin
  • 1 Can black beans with liquid
  • 1-1/2 cup Breadcrumbs
  • 1/2 cup Cornmeal
  • 1 tbsp Lime juice
  • 3/4 tsp Salt
  • 1/4 cup Reduced-fat cheddar
  • 2 tbsp Cilantro, minced

  • 1-1/2 cup Breadcrumbs
  • 1/2 cup Cornmeal
  • 1 tbsp Lime juice
  • 3/4 tsp Salt
  • 1/4 cup Reduced-fat cheddar
  • 2 tbsp Cilantro, minced
Instructions
  1. Preheat oven to 375 .
  2. Heat oil over medium heat. Sauté onions, peppers, garlic, and spices for 3 minutes.
  3. Add black beans. Remove from heat and add breadcrumbs, cornmeal, lime juice and salt.
  4. Remove 1 cup of bean mixture and puree in a blender until a puree is formed. Add the puree back into the bean mixture.
  5. Add cheddar cheese and cilantro.
  6. With a spoon form small portions and place portions onto a plate that is lightly dusted with cornmeal. Press down.
  7. Bake for 15 minutes.
