Ingredients
- 1 tbsp Olive oil
- 4 tbsp Chopped fresh basil 60 mL
- 1/2 cup Green pepper, chopped
- 1/2 cup Chicken breast meat, cooked and chopped
- 2 clove Garlic, minced
- 1 tsp Chili powder
- 1/2 tsp Dried oregano
- 1/2 tsp Cumin
- 1 Can black beans with liquid
- 1-1/2 cup Breadcrumbs
- 1/2 cup Cornmeal
- 1 tbsp Lime juice
- 3/4 tsp Salt
- 1/4 cup Reduced-fat cheddar
- 2 tbsp Cilantro, minced

Instructions
- Preheat oven to 375 .
- Heat oil over medium heat. Sauté onions, peppers, garlic, and spices for 3 minutes.
- Add black beans. Remove from heat and add breadcrumbs, cornmeal, lime juice and salt.
- Remove 1 cup of bean mixture and puree in a blender until a puree is formed. Add the puree back into the bean mixture.
- Add cheddar cheese and cilantro.
- With a spoon form small portions and place portions onto a plate that is lightly dusted with cornmeal. Press down.
- Bake for 15 minutes.
