Black Bean Patties
Ingredients
  • 1tbsp Olive oil
  • 4tbsp Chopped fresh basil60 mL
  • 1/2cup Green pepper, chopped
  • 1/2cup Chicken breast meat, cooked and chopped
  • 2clove Garlic, minced
  • 1tsp Chili powder
  • 1/2tsp Dried oregano
  • 1/2tsp Cumin
  • 1 Can black beans with liquid
  • 1-1/2cup Breadcrumbs
  • 1/2cup Cornmeal
  • 1tbsp Lime juice
  • 3/4tsp Salt
  • 1/4cup Reduced-fat cheddar
  • 2tbsp Cilantro, minced
Instructions
  1. Preheat oven to 375 .
  2. Heat oil over medium heat. Sauté onions, peppers, garlic, and spices for 3 minutes.
  3. Add black beans. Remove from heat and add breadcrumbs, cornmeal, lime juice and salt.
  4. Remove 1 cup of bean mixture and puree in a blender until a puree is formed. Add the puree back into the bean mixture.
  5. Add cheddar cheese and cilantro.
  6. With a spoon form small portions and place portions onto a plate that is lightly dusted with cornmeal. Press down.
  7. Bake for 15 minutes.
