Black Bean Patties

Chicken breast meat, cooked and chopped

Can black beans with liquid

Breadcrumbs

Cornmeal

Reduced-fat cheddar

Instructions
Preheat oven to 375 .
Heat oil over medium heat. Sauté onions, peppers, garlic, and spices for 3 minutes.
Add black beans. Remove from heat and add breadcrumbs, cornmeal, lime juice and salt.
Remove 1 cup of bean mixture and puree in a blender until a puree is formed. Add the puree back into the bean mixture.
Add cheddar cheese and cilantro.
With a spoon form small portions and place portions onto a plate that is lightly dusted with cornmeal. Press down.
Bake for 15 minutes.
