Basil Chicken Salad Pitas

Ingredients
  • 2 tbsp Cider vinegar 30 mL
  • 1 Medium garlic clove, minced
  • 1/4 tsp Black pepper 1 mL
  • 1/4 tsp Salt 1 mL
  • 2 tbsp Oil 30 mL
  • 2 cups Cooked diced chicken 500 mL
  • 2 cups Coarsely chopped spinach 500 mL
  • 1/2 cup Finely chopped red onion 100 mL
  • 1/4 cup Chopped fresh basil 60 mL
  • 8 Tomato slices
  • 4 whole-wheat pita rounds cut in half

Instructions
  1. Whisk together the vinegar, garlic, black pepper, salt and oil in a medium bowl. Add the chicken, spinach, onion and basil. Toss until well coated.
  2. Place a tomato slice and equal amounts of the chicken mixture in each of the pita halves.
