Basil Chicken Salad Pitas
The basil adds complexity and enhances the chicken flavour of this pita dish. An easy, delicious way to use leftover chicken breast.
Ingredients
  • 2tbsp Cider vinegar30 mL
  • 1 Medium garlic clove, minced
  • 1/4tsp Black pepper 1 mL
  • 1/4tsp Salt1 mL
  • 2tbsp Oil30 mL
  • 2cups Cooked diced chicken 500 mL
  • 2cups Coarsely chopped spinach500 mL
  • 1/2cup Finely chopped red onion100 mL
  • 1/4cup Chopped fresh basil60 mL
  • 8 Tomato slices
  • 4 whole-wheat pita roundscut in half
Instructions
  1. Whisk together the vinegar, garlic, black pepper, salt and oil in a medium bowl. Add the chicken, spinach, onion and basil. Toss until well coated.
  2. Place a tomato slice and equal amounts of the chicken mixture in each of the pita halves.
