Ingredients
- 1 cup Farro
- 2 cup Vegetable broth
- 1 Can diced tomatoes
- 1 tbsp Olive oil
- 1 Small green bell pepper
- 1 Small red bell pepper
- 1 Small onion
- 1 Can red kidney beans
- 8 oz Lean ground turkey
- 1 tbsp Cajun seasoning

Instructions
- Combine farro, broth, diced tomatoes in a medium pan. Bring to a boil. Reduce heat and simmer for 20 minutes.
- In another pan, heat oil. Add the turkey, bell pepper, onion and Cajun seasoning. Sauté for 5 minutes.
- Stir in the turkey mixture and beans into the faro mixture. Cover and simmer for 20 minutes.
