Cajun Grains
Ingredients

Farro

Vegetable broth

Can diced tomatoes

Olive oil

Small green bell pepper

Small red bell pepper

Small onion

Can red kidney beans

Lean ground turkey

Cajun seasoning
Instructions
Combine farro, broth, diced tomatoes in a medium pan. Bring to a boil. Reduce heat and simmer for 20 minutes.
In another pan, heat oil. Add the turkey, bell pepper, onion and Cajun seasoning. Sauté for 5 minutes.
Stir in the turkey mixture and beans into the faro mixture. Cover and simmer for 20 minutes.
