Cajun Grains
Ingredients
  • 1cup Farro
  • 2cup Vegetable broth
  • 1 Can diced tomatoes
  • 1tbsp Olive oil
  • 1 Small green bell pepper
  • 1 Small red bell pepper
  • 1 Small onion
  • 1 Can red kidney beans
  • 8oz Lean ground turkey
  • 1tbsp Cajun seasoning
Instructions
  1. Combine farro, broth, diced tomatoes in a medium pan. Bring to a boil. Reduce heat and simmer for 20 minutes.
  2. In another pan, heat oil. Add the turkey, bell pepper, onion and Cajun seasoning. Sauté for 5 minutes.
  3. Stir in the turkey mixture and beans into the faro mixture. Cover and simmer for 20 minutes.
