- Cooking spray
- 2 Medium fennel bulbs
- 1 Onion, thinly sliced
- 1 tbsp Olive oil
- 1 cup Vegetable broth
- 2 tbsp Vinegar
- 1 can Cannellini beans
- ¼ cup Parsley, chopped
- Pinch of salt and pepper

Instructions
- Preheat oven to 375 .
- Add fennel and onion on a baking dish and coat with cooking spray.
- Add olive oil, broth, and vinegar. Add pinch of salt and pepper.
- Bake for 1 hour.
- Add the beans and parsley and bake for 10 minutes.
