Braised Fennel and White Beans
Ingredients
  • Cooking spray
  • 2 Medium fennel bulbs
  • 1 Onion, thinly sliced
  • 1tbsp Olive oil
  • 1cup Vegetable broth
  • 2tbsp Vinegar
  • 1can Cannellini beans
  • ¼cup Parsley, chopped
  • Pinch of salt and pepper
Instructions
  1. Preheat oven to 375 .
  2. Add fennel and onion on a baking dish and coat with cooking spray.
  3. Add olive oil, broth, and vinegar. Add pinch of salt and pepper.
  4. Bake for 1 hour.
  5. Add the beans and parsley and bake for 10 minutes.
