Braised Fennel and White Beans
Ingredients
Cooking spray

Medium fennel bulbs

Onion, thinly sliced

tbsp
Olive oil

cup
Vegetable broth
2
tbsp
Vinegar

can
Cannellini beans
¼
cup
Parsley, chopped
Pinch of salt and pepper
Instructions
Preheat oven to 375 .
Add fennel and onion on a baking dish and coat with cooking spray.
Add olive oil, broth, and vinegar. Add pinch of salt and pepper.
Bake for 1 hour.
Add the beans and parsley and bake for 10 minutes.
