Ingredients
- 1 can Canned salmon unsalted and undrained 7.5 oz/213 g
- 1/4 cup Low-Fat Mayonnaise
- 2 tbsp Finely chopped onion
- 2 tsp Lemon juice
- 1/4 tsp Salt
- pinch Freshly ground black pepper
- 4 Whole wheat English muffins split and toasted

Instructions
- In a small bowl, flake salmon. Remove and discard skin, but mash bones with salmon. Stir in mayonnaise, onion, lemon juice, salt and pepper.
- Spread filling on one-half of toasted muffin and top with other half. Cut assembled sandwich into 2 pieces and serve.
