Super Salmon Sandwiches

Canned salmon unsalted and undrained

cup
Low-Fat Mayonnaise

Finely chopped onion

Lemon juice

Salt
pinch
Freshly ground black pepper

Whole wheat English muffins split and toasted
Instructions
In a small bowl, flake salmon. Remove and discard skin, but mash bones with salmon. Stir in mayonnaise, onion, lemon juice, salt and pepper.
Spread filling on one-half of toasted muffin and top with other half. Cut assembled sandwich into 2 pieces and serve.
