Super Salmon Sandwiches
Ingredients
  • 1can Canned salmon unsalted and undrained7.5 oz/213 g
  • 1/4cup Low-Fat Mayonnaise
  • 2tbsp Finely chopped onion
  • 2tsp Lemon juice
  • 1/4tsp Salt
  • pinch Freshly ground black pepper
  • 4 Whole wheat English muffins split and toasted
Instructions
  1. In a small bowl, flake salmon. Remove and discard skin, but mash bones with salmon. Stir in mayonnaise, onion, lemon juice, salt and pepper.
  2. Spread filling on one-half of toasted muffin and top with other half. Cut assembled sandwich into 2 pieces and serve.
