Spinach Salad

Ingredients
  • 4 cup Fresh spinach leaves
  • 1 cup Fresh carrots grated
  • 1 cup Fresh mushrooms sliced
  • 2 cup Corn (canned low-sodium)
  • Vinaigrette
  • 1 bulb Garlic separated and peeled
  • 1/2 cup Water
  • 1 tbsp Red wine vinegar
  • 1/4 tsp Honey
  • 1 tbsp Virgin olive oil
  • 1/4 tsp Black pepper
Ingredients
  • 4 cup Fresh spinach leaves
  • 1 cup Fresh carrots grated
  • 1 cup Fresh mushrooms sliced

  • 1 bulb Garlic separated and peeled
  • 1/2 cup Water
  • 1 tbsp Red wine vinegar
  • 1/4 tsp Honey
  • 1 tbsp Virgin olive oil
  • 1/4 tsp Black pepper
Instructions
  1. Place garlic cloves in a saucepan and pour water to cover the cloves.
  2. Bring water to a boil, reduce heat, and simmer until garlic is tender, about 15 minutes.
  3. Reduce the liquid to 2 tbsp and increase heat for 3 minutes.
  4. Pour contents into a small sieve over a bowl and mash the garlic through the sieve.
  5. Whisk the vinegar into the garlic mixture. Add oil and black pepper.
  6. Serve over salad

Serve with Vegetarian Spaghetti for a healthy plate.
