- Salad
- 4 cups Finely shredded cabbage 1L
- 2 cups Cooked diced chicken breast meat 500ml
- 6 oz Snow peas or snap peas, cut in 1-in pieces diagonally 170g
- 2 Green onions, sliced diagnonally
- 1 Jalapeno, seeds and ribs removed, thinly sliced into rounds
- 2 oz Almonds or dry roasted peanuts toasted 55g
- 1/2 cup Chopped fresh cilantro 125ml
- 1/4 cup Chopped fresh basil 60ml
- Dressing
- 2 tbsp Fresh lime juice 30ml
- 1 tbsp White or white balsamic vinegar 15ml
- 2 tbsp Canola oil 30ml
- 1 tbsp Granulated sugar 30ml
- 2 tsp Grated ginger 10ml
- 1/2 tsp Salt 2ml
- Black pepper to taste

Instructions
- Place the salad ingredients in a large bowl.
- Whisk together the salad dressing ingredients. Pour over the salad and toss until well coated. Serve immediately.

Optional: mandarin orange slices add colour and vitamin C. Mix in some red cabbage for increased anti-oxidants.
