Asian Cabbage Salad
Ingredients
Salad
  • 4cups Finely shredded cabbage1L
  • 2cups Cooked diced chicken breast meat500ml
  • 6oz Snow peas or snap peas, cut in 1-in pieces diagonally170g
  • 2 Green onions, sliced diagnonally
  • 1 Jalapeno, seeds and ribs removed, thinly sliced into rounds
  • 2oz Almonds or dry roasted peanuts toasted55g
  • 1/2cup Chopped fresh cilantro125ml
  • 1/4cup Chopped fresh basil60ml
Dressing
  • 2tbsp Fresh lime juice30ml
  • 1tbsp White or white balsamic vinegar15ml
  • 2tbsp Canola oil30ml
  • 1tbsp Granulated sugar30ml
  • 2tsp Grated ginger10ml
  • 1/2tsp Salt2ml
  • Black pepper to taste
Instructions
  1. Place the salad ingredients in a large bowl.
  2. Whisk together the salad dressing ingredients. Pour over the salad and toss until well coated. Serve immediately.

A fresh side dish full of nutrients, character and MORE nutrients! Makes a great lunch.
Optional: mandarin orange slices add colour and vitamin C. Mix in some red cabbage for increased anti-oxidants.
