- 5 zucchinis sliced
- 1 Medium red onion chopped
- 1 Garlic clove crushed
- 14.5 oz Can diced tomatoes
- 1 tbsp Vegetable oil
- Pinch of salt and pepper

Instructions
- Heat oil in a pan and cook with onions and garlic on medium heat for 5 minutes (until soft).
- Add diced tomatoes and bring to a boil. Simmer for 15 minutes.
- Add zucchini to the sauce and cover, allowing to simmer for 15 minutes (until soft).
- Add pinch of salt and pepper.
