Italian Chopped Salad

Ingredients
  • 5 cups Chopped romaine lettuce
  • 5 cups Baby spinach
  • 1/2 Medium red onion chopped
  • 1 Large red bell pepper chopped
  • 1 cup Cucumbers chopped
  • 1 Large carrot peeled and chopped
  • 1 cup Grape tomatoes halved
  • 1 Can black olives
  • 1/3 cup Grated Parmesan cheese
  • Vinaigrette
  • 1/3 cup Extra virgin olive oil
  • 1/3 cup Red wine vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp Honey
  • 2 tsp Dried oregano
  • Pinch of salt and pepper

  • 1/3 cup Grated Parmesan cheese
  • Vinaigrette
  • 1/3 cup Extra virgin olive oil
  • 1/3 cup Red wine vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp Honey
  • 2 tsp Dried oregano
  • Pinch of salt and pepper
Instructions
  1. In a large bowl, combine lettuce, spinach, red onion, red bell pepper, cucumber, carrots, tomatoes, olives and parmesan cheese.
  2. In a small bowl, whisk together the olive oil with red wine vinegar, Dijon mustard, honey, oregano, and salt and pepper.
  3. Add vinaigrette on top of salad.
