Brown Rice Salad

Ingredients
  • 1 cup Brown rice
  • 12 Spears of asparagus, cooked - medium
  • 2 Medium tomatoes, diced
  • 2-1/2 tsp Lemon juice
  • 2 tsp Olive oil
  • 1/8 tsp Salt
  • 1/8 tsp Black pepper
  • 1/4 cup Fresh chives or green onions, minced
  • 2 tsp Fresh dill, minced

Instructions
  1. Cook brown rice according to instruction on package. Allow to cool.
  2. Cut asparagus into 1-inch pieces.
  3. In a large salad bowl, combine asparagus and tomatoes.
  4. Whisk together lemon juice, oil, salt and pepper. Stir in chives and dill.
  5. Add rice to salad bowl. Pour in dressing.
