Onion Sautéed Zucchinis

Ingredients
  • 5 zucchinis sliced
  • 1 Medium red onion chopped
  • 1 Garlic clove crushed
  • 14.5 oz Can diced tomatoes
  • 1 tbsp Vegetable oil
  • Pinch of salt and pepper

  • 1 tbsp Vegetable oil
  • Pinch of salt and pepper
Instructions
  1. Heat oil in a pan and cook with onions and garlic on medium heat for 5 minutes (until soft).
  2. Add diced tomatoes and bring to a boil. Simmer for 15 minutes.
  3. Add zucchini to the sauce and cover, allowing to simmer for 15 minutes (until soft).
  4. Add pinch of salt and pepper.
