Braised Winter Vegetables

Ingredients
  • 3 Carrots, peeled and cut into chunks
  • 3 Small white turnips, peeled and cut into chunks
  • 1/2 Rutabaga, peeled and cut into chunks
  • 1 Large sweet potato, peeled and cut into chunks
  • 3 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Freshly ground black pepper
  • Chopped fresh parsley

Instructions
  1. Place carrots, turnip, rutabaga and sweet potato in roasting pan. Sprinkle with oil, salt and pepper.
  2. Cover pan and roast in a preheated oven (400ºF) for 35 minutes or until vegetables are tender. Serve garnished with chopped parsley.
Recipe Notes

Veggies are a good source of dietary fiber. Dietary fibre helps prevent constipation. It also may help lower cholesterol in the blood.

Try adding turnips, rutabagas, carrots and sweet potatoes in your favourite stew recipe.
