Squash soup
Ingredients
  • 1tbsp Olive oil
  • 1tbsp Minced garlic
  • 1 Medium onionchopped
  • 1 Butternut squashpeeled and cubed 1 sweet potato, peeled and cubed
  • 6cups Broth or water
  • Salt, pepper, and sugar to taste
Instructions
  1. Heat oil in a large pot. Add garlic and onions and sauté about 3 minutes.
  2. Add squash and sweet potato. Sauté for 3 minutes, add water. Cook until tender, about 20 minutes. Purée. Return to heat and allow soup to thicken.
  3. Add salt, pepper and sugar to taste.
