Shrimp Kabobs with Artichokes
Ingredients
  • 3/4pound Large raw shrimpsshelled and deveined
  • 12 Extra small artichoke heartscanned
  • 12 Large pitted Kalamata olives
  • 2tbsp Crumbled feta-cheeselow-fat
Marinade
  • 1/4cup Olive oil
  • 2tbsp Grated lemon peel
  • 1/4cup Fresh lemon juice
  • 1tsp Greek seasoning
  • 1/2tsp Oregano
  • 1/4tsp Salt
  • 1/4tsp Salt
Instructions
  1. Combine marinade ingredients in a large container. Mix well.
  2. Place shrimps in marinade and allow to sit, covered, for 4 hours or overnight, in fridge.
  3. Heat grill to medium heat.
  4. Add artichoke pieces and olives to marinade. Thread shrimp, artichokes, and olives on 4 12-inch to 14-inch skewers.
  5. Grill, covered, for 5-8 minutes, turning once or twice.

Try this meal with 1/3 cup of whole-wheat pasta. Don’t forget to fill up ½ of your plate with vegetables !

Don’t like artichokes? Switch up this vegetable with other veggies such as zucchinis, bell peppers, onions, mushrooms, or even all of these!
