Lentil Soup
Ingredients
  • 2tsp Olive oil
  • 1 Small onion
  • 2 Garlic clovesminced
  • 32oz Vegetable broth
  • 1 Can diced tomatoes
  • 3cup Water
  • 1cup Dried lentils
  • 1 Bay leaf
  • Pinch of saltpepper, oregano
Instructions
  1. Heat oil over medium heat. Sauté onions for 3 minutes. Sauté garlic for 30 seconds.
  2. Add remaining ingredients and bring to a boil.
  3. Reduce heat and simmer for 15 minutes.
