Egg ‘n’ Bacon Sandwiches
You’ll be surprised at how easy it is to prepare an on-the-go bacon and egg breakfast!
Ingredients
  • 2 Eggs
  • 1tsp 1% milk5 mL
  • 1/4tsp Salt1 mL
  • 1/8tsp Pepper0.5 mL
  • 1 Whole-wheat English muffinsplit and toasted
  • 2oz Slices back bacon(1/2 oz each, 14 g
  • 2tbsp Shredded reduced-fat cheddar cheese 30 mL
Instructions
  1. In a small bowl, whisk the eggs, milk, salt and pepper. Divide between two 10 oz (300 ml) microwave-safe custard cups coated with cooking spray. Microwave, uncovered, on high for 20 seconds. Stir; microwave for 20-25 seconds longer or until centre of egg is almost set.
  2. Place a slice of back bacon on each muffin half; top with egg and sprinkle with cheese. Microwave, uncovered, for 10-13 seconds or until cheese is melted. Let stand for 20-30 seconds before serving.
