Blueberry Pancakes
Ingredients
  • 1/2cup Whole wheat flour
  • 1/2cup White flour
  • 1tbsp Sugar
  • 2tsp Baking powder
  • 1/4tsp Salt
  • 1large Egg, beaten
  • 1cup Low-fat 1% milk
  • 1cup Blueberries, washed
  • 2tbsp Canola (or other vegetable) oil
Instructions
  1. Combine flours, sugar, baking powder and salt in a bowl.
  2. In another bowl combine egg, milk and canola oil. Add to flour mixture. Stir until blended.
  3. Add blueberries.
  4. Form pancakes by pouring batter in circles onto a hot, lightly greased griddle or frying pan.
  5. Cook until pancakes have bubbly surface and dry edges. Flip and cook other side.

You can use frozen berries instead of fresh berries
