Apricot-Ginger Granola
Enjoy this granola plain, or serve topped with fresh fruit and yogurt. Change up the nuts, seeds, and dried fruit and you’ll have a different flavour every time!
Ingredients
  • 2cups All Bran Buds or similar high fibre cereal500 ml
  • 2cups Rolled oats500 ml
  • 1cup Pecans or walnuts, chopped250 ml
  • 1/2cup Sunflower seeds125 ml
  • 1/3cup Packed brown sugar75 ml
  • 3tbsp Canola oil45 ml
  • 1tsp Ground cinnamon5 ml
  • 1/2tsp Ground nutmeg2 ml
  • 1/2tsp Salt2 ml
  • 12 Dried apricot halves, chopped
  • 1tbsp Fresh grated ginger15 ml
Instructions
  1. Preheat oven to 300°F
  2. In a large bowl, combine the cereal, oats, pecans, sunflower seeds, sugar, canola oil, cinnamon, nutmeg, and salt. Place on a baking sheet, and bake for 12 minutes. Remove from oven, stir, and bake for an additional 5 minutes, or until the granola begins to lightly brown. Remove from oven.
  3. Stir in remaining ingredients. Serve warm or cooled.
